The Jewish Home's kitchen features tasty kosher meals prepared fresh on our premises. Here is one of our favorite recipes.


Apple Spice Cake (serves approx. 10)
2 cups flour
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1 teaspoon all spice
1 cup butter or margarine softened
2 cups white sugar
4 eggs
1 teaspoon baking soda
1 tablespoon warm water
1 teaspoon vanilla extract
3 apples: peeled, cored and chopped
1/2 cup raisins
1/4 cup confectionary sugar for dusting
 
  1. Preheat oven to 350º F.
  2. Grease a 10 inch tube pan or 13 x 9 inch pan.
  3. Cover raisins with warm water, let soak for 10 minutes.
  4. Whisk together flour, spices, set aside.
  5. Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together baking soda and 1 tablespoon warm water and mix into the sugar mixture. Stir in flour mixture, apples and strained raisins until well blended. Pour batter into prepared pan.
  6. Bake for approximately 1 hour, or until tester comes out clean. Cool in pan and dust with confectionary sugar.
